There is an accessory that elevated the grill even with the top lid meets the bottom. It sells for $49 and I'll try and find the link because I'm getting one. It also holds the place setter in it as well.

How was the level and flavor of the smoke ... more subtle than the WSM, or not so much? ...

My guess is the BGE is molded with that hole, not molded then drilled out. By trying to make an existing hole bigger, in any material is always a no no. Try it with a piece of wood, drill a ½" hole and then try making that same hole bigger to a ⅝" . Nope. Same goes for ceramic. And that ceramic the BGE is made of, is just a smidge harder than terra-cotta. I wouldn't fuck with any of that, once the glazing is compromised, that's it. Damage done. Better to buy a different probe.
