Yep and he managed to quote a Canadian while making it.   
 
 
BTW there is no such thing as Canadian bacon in Canada. 
 
There is back bacon, and peameal bacon and neither is any real  relation to that atrocity that is called Canadian bacon  in the USA. 
 
It would be similar to saying spam=country ham.   
 
Except I actually don't mind spam .

14 hours later I hit 200f. Wrapped and in cooler until later.

The egg is a champ for this type of cook. I didn't touch the vents since about 10pm last night and I never once opened the egg after I put it on. This was. 5 1/2 lb piece of brisket. I followed amazingribs recipe to corn it and then use their pastrami rub recipe.
