Thanks for the pointers... here's what I went for;
370g blackberries
4x small apples, cored
3x chipotles, rehydrated
1x brown superhot
1 cup rice vinegar
1.5 cup water
3TBS honey
1tsp xanthan gum
All blended, simmered, sieved and simmered again. Then bottled hot.
It has worked well with breaded chicken, jacket potato and as a steak sauce.
