Bourdain - Peru: Spanked By a Pepper

Ceviche.
 
Some places in Latin America they use ketchup.
 
I'm cool and the gang with that.
 
Ceviche of any kine' kicks ass.
 
And so does Bourdain.
 
He actually knows how to cook.
 
And for true knows how to eat.
 
To party with Tony is on my bucket list.
 
Ceviche is amazing! ... every time I'm in Lima, I eat it at least once a day! always with Aji Limos!

The scene showing so much fresh fish and beautiful, pureed aji amarillo took place at a weekend-getaway house.  Here we go:

One of my thoughts today is how feasible might it be to live something like this (with the focus on food, not celebrity or opulence)?  Any sense from your Peru visits of what housing costs and employment opportunities might be in a garden-variety fishing village?  I suspect we're watching US upper-class celebrities meet with the same from Peru (extra  house, weekends off), but fresh fish and chiles might be available just the same to anyone with a cabin and some dirt to grow in, so I'm curious about the cost of a cabin and dirt.
 
 
 
GUIULFO: This is delicious ceviche from the coast.

BOURDAIN: Beautiful.

Basically raw king fish fillets dressed with aji Amarillo and lime juice.

Perfect.

GUIULFO: That's scallops ceviche.

BOURDAIN: Fresh scallops and lemon juice, garlic and aji (INAUDIBLE). Drum fish, braised in (INAUDIBLE), a corn based beer.

UNIDENTIFIED MALE: They look fantastic.

UNIDENTIFIED MALE: Spicy or not?

GUIULFO: This is very spicy.

UNIDENTIFIED MALE: Very spicy.

The transcriptionist couldn't tell either whether the inaudible aji is limo or limón.
 
Anyway, great scene; I'm hungry again just replaying it in my mind.

Ditto to practically everything said here.... I got introduced to Ceviche while installing a furnace. I have learned from many years working in peoples home to say YES anytime when a customer comes to you in their best English and says...I have prepared food please come..... I have been treated to some of the world's best by following this rule. 
 
I just want to be on the sound crew for Anthony Bourdain....they get to do, eat and go to everwhere he goes... and none of the celebrity hassle... Ha ha
 
Bourdain rocks!!
 
And he knows how to get drunk.
 
Knows his way to some good smack too.
 
There's a good clip somewhere of him konking out on some South American bark juice.
