It fits what I'd read ... I think ChefSteps suggests that 35-36g makes a nice burger bun, for 1/2lb (8 oz, 128g for JHP) patties ... LOL.

Rolls are easy compared to the bread. For burgers, start with 2.5 oz per roll...you can do 3 oz per roll for a nice size roll for pulled pork. Sliders try 2oz.
 
I'm thinking saute some ingreds... like meat, onion, peppers, except salami/pepperoni, and use warm sauce... you don't have to bake as long and maybe it's breadier...
 
Baked the Bread yesterday, didnt realize its been three weeks (April 12 sourdough made).
Very nice and chewy Mmmmmmmm.
Pizza was awesome (see Pizza thread) The bead will start with grilled cheese I think :)
A bit overcooked but still moist.

Ginger Bread
Mmmmmmmmmmmmm..................
 
2 cups Buckwheat flour
3/4cup Fancy Molases
1/2 cup Coconut oil
1/2cup water
2 eggs
2tbsp dried ginger powder
1/2tbsp Dry Chile De Arbol
1/2tbsp coco powder
Grated Nutmeg to taste
1tsp Cinnamon
3tbsp poppy seeds ground.
1tbsp powder buttermilk
1tsp Baking powder
salt
 
mix all except BPowder/eggs, hydrate 5 hours.
Mix eggs and Baking powder and pour into pan, wait 10min for BP to activate
 
350f, 45min aprox.
