breeding-crossing Breeding - When to emasculate

<p>I have a lot of experience breeding tomatoes, but peppers are new to me. My question is - what's the right blossom stage to emasculate the unopened flower so that it's viable, but hasn't self pollinated yet? Some candidates below:

The one in the middle bottom? Or is that too late? Maybe the one just to the left of that?

I'd wait for a flower that is just getting ready to open and then emasculate

I usually emasculate right before I go to bed. It helps me sleep at night.
