Buncha Malarky 2018 edition

Welcome to 2018
There is probably not going to be a whole lot of action around here until March 1st when I'll start soaking seeds.
I was overwhelmed in 2017, starting in January was not a good idea. This year I plan to pot up the plants in stride and avoid being root bound. Starting in March and outside in buckets in the middle to end of May. I'll probably try to sell excess plants locally on CL/FB as well, instead of trying to keep every seed I sprout alive myself.

I'm really struggling to decide if I should grow Aji Amarillo, Big Red Rocoto's, and maybe even Panca now that I found frozen amarillos/rocotos and panca paste at the store now. And the amarillos and rocoto's take soo long to ripen...
I'd like to fit in Aji Dulce, Aji Arnaucho, cgn23209, SugarRush Peach and Trepadeira do Werner, but I don't know. 
 
I've got enough BahaGoats in the freezer to last me I think. I actually might have enough Amarillos too now that I think of it.
I'm growing cgn21500 just to finally get it off my bucket list. I hope its good.
The more I type, the more bummed i get that i can't grow all these...

I too wait for March, but unlike you I intend to focus on rocotos this year, a trial to see which varieties can acclimate. I found that if grown in containers and brought in after the weather turns on me, the Rocoto Amarillos ripened fairly fast.
 
The Aji Limos are going to be a favorite here too, already have requests from friends and neighbors who were lucky enough to sample the fresh ones from last year, they're a real hit!
 
I'm watching you for the cooking too...You steal the YUMMIEST sounding recipes!!

I think you'll like the blueberry-citrus sauce... I used dark B-grade maple syrup in the "Moose Breath" version, but I think coconut sugar would work as well. Cheers!

Moosebreath! Citrus, Blueberries, and Real Maple Syrup.
6 Big yellow7's to make it fun. Pretty good. Gonna make for some spicy pancakes...not sure what else to do with blueberry sauce.

My first carrot based sauce. I used some bishops crowns instead of fresnos.
It's very good, I always have the ingredients around. I will be making this again.

None of the sauces I've made are hot enough, I need to just dump a bunch of peppers in next time.

600g of seeded amarillos.
Made only 2.5 half pints. I cooked it down to a thickness similar to the commercial product.
Next time I think I'll leave seeds in and strain them with a mill. I think I lost a bit of heat from removing that placenta.
Over all this stuff is great. I like it a lot better than the commercial product. It has better color and a better fresher brighter taste and flavor.

I can't cook wings today but I made some poppers.
Cajun seasoned shredded chicken mixed with some Aji panca Paste, Monterey Jack cheese and bacon.

That puree looks great, and the food too! What did you do to drop the PH on that? I've got 5 full gallon bags of aji amarillo pods in my freezer from last year, and this looks a good way to freeze up a bulit of freezer space.
