made 96 bottles last night....I've got enough in fridge for 3-5 more, just waiting on Filmore Container to deliver bottles today!
red: a variety of red peppers, lots of Scorpions and Primo, but a good mix.....6 bags of Maine cranberries, 3 prickly pear, pomegranate nails and 16oz of Pom juice, local carrots, 3 bulbs of garlic, a little agave......
green got a lot of jalapenos, bunch of other random greens....2 sweet onion, 3 bulbs of garlic, lime juice and agave....
guess i don't have a pic of the ingredients, but here's the onion, garlic and 2/3 of the peppers under cherry smoke....
and the red simmering away....
ended up with 71 bottles of red.....might be one of my best sauces all time
25 bottles of green......with another 3-5 left to bottle.....i am not a huge green fan, but this one came out just right.....just enough smoke, garlic and onion give it depth, the lime & agave cancel out the bitterness......really solid green sauce, althugh i probably won't keep one......the color is reminiscent of Linda Blair for sure!
I might rip out a batch of yellow tonight.....probably +/- 60 bottles.....I am leaning towards mango.....maybe papaya.....star fruit? and some citrus......
then it is just waiting for my last few to ripen and make a batch of 30-40 blend......blend will get some smoke treatment, pepper, onion, carrot....a basic sauce, but there will be 20-25 varieties of pepper in there at least......oranges, yellows, reds, chocolates, whites, peach.......
Almost time to get selling.....after the kids and I heat shrink, label, hand letter everything.....looks like I'll top 200 bottles this year
Not bad for a little home operation
