I'm going to try my hand at Carnitas. I was in the store today looking for something to grill and I saw bags of pork for carnitas.

I saw a recipe posted on , ahem, another blog recently. I'm not following that recipe at all but I'm doing my own version. I guess these can still be called "carnitas". I know they need to slow cook in a marinade for a few hours and I'm doing that but instead of finishing them in the oven I'm going to do it on the grill.

I decided to use this MOJO stuff to marinate the pork. It's a GOYA product and it's cheap...usually about 2 bucks a bottle. It's mostly orange and lime juice with onion and garlic with other seasonings.

I let the pork sit in the fridge soaking in MOJO for a couple hours.

Hey chuck, heres a recipe I use but it's for the stove. It turns out great though............

3-4lbs country style ribs
Oregano
Salt
Paprika
Cumin

Cut pork in 2-3" chunks, season to taste and let sit overnight.
Heat 2lbs of Manteca (lard) in a pot until it starts to smoke. Fry the chuncks of pork until dark golden brown and drain on paper towels. Fry in batches you dont want to crowd the pot, the trick is to sear the meat all the way around. Add drained pork to a pot with 2 bottles of pacifico and about 2 cup of orange juice. Cover and simmer for about 45 minutes. Remove lid and continue to simmer until all liguid disappears and the meat falls apart....ummmmmmm. I serve with tortillas, and all the fixins!!!!

That sounds like a damn good recipe, B N.

Mine came out kinda dry. I'll post picyures later. It was a learning process.
