Well got around to cooking.  Mad Poor Man's Beef Wellington tonight.  Came out tasty.  Not too much work to make the bread wrapped beef

Well the wifey wanted my meatballs.  So I decided to go with pork/veal/beef mixture with fresh herbs and parm cheese.  Its cooking, will add the sauce and then bake for 20 minutes.

Cheese on top, pasta sauce is in, now into the oven for 20

Well tonight doing a mashup.....   Southern Buttermilk Fried Schnitzel 
 
Starting with a mix of Buttermilk, parsley, pepper, salt, onion powder and garlic for a 4 hour marinade.  I pounded each breast to about 1/4"
