My wife and I tried an ill-fated experiment to make tuna vodka at one point.
Problem with nopales or tunas is that they're stupid slimy. That's an acquired texture.

Here's a core recipe you could start with. Looks like they're using salt/baking soda to parch the cactus. Let us know how it turns out if you try it.
