Can all chillies be eaten green or yellow?

Hiya

Was just wondering if all varieites of chilli can be picked and eaten green or yellow, will they be hotter greenor yellow or do they have to mature to get heat?

Also, is it true that the more you pick the more chillies will grow?

I read in a book that it is a good idea to pick the first fruits off the plant green what are your opinions of this?

1. Yes, all chiles can be picked green, yellow, white or whatever the unripen color is. just make sure it's mature enough or it'll taste like grass.
2. The peak of the heat is always when the chile is fully ripen.
3. The plant's entire purpose in life is to reproduce. so pick one chile, and another will grow.
4. Usually the first pod takes a lot of energy to ripe, so picking it early will let the plant get more growth faster.

If I want to pick them green to encourage more chillies, how do I know when they are ready to pick?

About the ony chili I eat green are jalapenos and with those you know they are ready green when their skin starts corking. The little peppers you guys pull off to encourage more growth are probably too small to eat and haven't had enough time to become hot.
