Can any of you recommend a good habanero and lime sauce recipe?

SL lady advice is best advice! Real citrus tends to be more acidic than vinegar and not all vinegars are created equal.  Some have a higher acidity and some are lower.   Just keep that in mind and explore. ;)
Thank you, JMN~  just trying to help~

Thanks for posting about the citrus-v-vinegars.  Just a FIFY for clarity for the new folks~  ;)   +++ to experimenting!

Orange also pairs really well with a hab sauce. In fact I have a mandarin orange tree ripening its fruit as we speak so I'm going to make a Caribbean Red sauce using then in the recipe . My Granny Smiths are also ripening and I might sneak one of them in too ! :)
