For Christmas last year, I was given a pint bottle of "chile pepper infused" honey (no pepper types mentioned in the ingedients list) that my sister bought at a craft fair near her home in Chatanooga, TN.
I have used it several times now and enjoy the sweet/hot flavor on cornbread, muffins, and even as a sweetener in mixed vodka cocktails.
I'd like to try and make my own using some of my superhots and unique flavor peppers, like Datils. Anyone have any ideas on the best way to do this? I've done chile extractions using alcohol and oil, but neither of those would seem to be a good addition to honey.
