3/4 cup toasted unsweetened shredded coconut, divided
1/4 cup butter
1 square (1 oz) baking chocolate chopped.
1/4 cup coconut or almond butter
1tsp sea salt
1/4tsp ghost chili powder
Melt the butter in the microwave with the chocolate. Add the coconut butter and stir until well incorporated. Add 1/4 cup toasted coconut, mix well and stick it into the freezer to cool and firm up. Meanwhile. pour the rest of the coconut into a plate and add salt & chili then mix thoroughly.
When the chocolate mixture is firm and scoopable, use tablespoon to scoop it out and roll it into the remaining coconut to form balls.
A friends recipe, my addition was the ghost chili. Tastes great just needs to firm up in the fridge. Stay tuned for photos.
