Honestly, I'd try brewing the coffee first then adding it to the recipe. You'll have to account for the extra liquid as it will probably thin your sauce.
Basically look at it this way - you probably don't eat coffee grounds when you wake up in the morning, so why put something in a sauce that you don't eat naturally?
