Celeste, that meal would have won me over. Especially if it was fried catfish fingerlings with just a squeeze of lemon.
 
Thanks Nate, JohnJ, and Celeste! The leftover chicken was great today on Rye bread with muenster cheese and some Dijon. Probably will be the same lunch for the next three days. No complaints here. Just too bad I devoured all that stuffing the night of!
 
Damn how long does it take you to eat a chicken? :rofl:

Yeah, the catfish would have to have been caught within hours-as few as possible. I got to rethink my "life after children" plan, I miss fresh fish. The menu I had planned for this throwdown did have greens(fried, in bacon fat, with onions and garlic and habeneros, and lemon juice, of course) and baked squash in it, but I couldnt get the kitchen time. I still plan on doing it and posting it, whenever my buddy and I can get enough waking time off together. (she's got a decent kitchen to cook in, and the secret marguerita recipe. I have a hotplate and no counters).

Kitchen rehab hopefully starts over christmas break, ya'll have kicked me in the can, I really want to cook again!
 
Celeste, seriously, that would have had my vote! You don't know how much I love a good pile of fried catfish fingerlings with collards. The squash too! I love a good squash medley with zucchini.
 
I think a sweet tea, L.I. style would have been appropriate ;)

Not summer squash- though thats good too- she had an acorn. I was thinking brown sugar and maple syrup and pecans with it. I hadnt actually thought of catfish for this throwdown- my main favorite comfort food this time of year is potato soup.

I'll see how far I have to drive to go fishing for cat, this summer, and see if I remember anything about fishing!-maybe it will show up in some future throwdown!
 
Acorn squash like that rules... just cut in half. Damn you can cook, enter a Throwdown and stop teasing us :lol:
 
Ah, Celeste... If you're going through a kitchen remodel I feel your pain. It took 5 1/2 weeks to get my counter tops installed. I was "kitchenless" for 3 1/2 months, and is a process I hope to only live again vicariously through other people... like FD4. Not fun by any means, but worth it in the end.
 
I'm kitchenless too, and will be for the next few Throwdowns.

I wish I was as far as the remodel. I finally got the water damage stopped (tuckpointing and three visits from assorted roofing guys) and ran out of funding for the remodel. I've learnt to DIY plaster repair, so I figured I can probably slumlord patch the ceiling over what used to be the stove and peel up the rest of the linoleum myself- I have gotten word I may have some volunteer muscle available to me to haul out the old stove and the counter tops- I might even break out a wall this summer and hang drywall. If I can refinance in the spring I might be ahead enough to pick up some decent used counters 'n cabinets from the Habitat store...Or if I win the lottery I can spend the 20 grand to do it like I'd really like!:rolleyes:
 
I would like to volunteer my services as a mason if it will help you get your kitchen in order. Of course I would need your vote in the throwdown and a variety of sauces in return. :lol:
 
THP- I found the counter top peeps to be tough on getting things done in a timely manner. I guess small residence jobs aren't worth the effort if they are installing way larger orders in hotels. "Back-order" is an excuse for "I haven't done anything yet." I'd call them the day after the mock-up... and every other day after that. Not to take the throwdown thread off topic or anything ;)
