Ferment #3:
 
25 Lemon Drops
5 White 7 Pots
4 Jay's Peach Ghost Scorpions
5 Orange Habaneros
1 1/2 Yellow Bells
1 lb  fresh pineapple
2/3 fresh sweet papaya
3/4 of a medium/large sweet yellow onion
5 cloves garlic
3.6% brine

Yellow Bouquets
Sweet Yellow Onion
Pineapple
Garlic
Yellow Bells
Cumin Seeds
Caldwell Starter
3.6% Riesling Brine

Damn you always have something awesome and delicious looking to post. Those sound like they're gonna turn out amazing. I haven't ever tried fermenting before so really appreciate the posted recipes I can try for when I give it a shot. Thanks for sharing more of your projects, it's always great to see what you've got cooking

those both look like winners to me! looking great. my last few ferments have used bell peppers of the requisite color to act as a filler, and I think they add nice flavor as well. keep it up! i need to get another sauce going...
 
I like the way these look!  I was thinking of adding cumin to old yeller when it's done.  Now that I see you have done it with pretty much the same combination I think I definitely will now.
