Yesterday I made an asado. Cook some chorizos(homemade), blood sausages and beef ribs. I brought this meat from a small grocery on a organic farm. this place is far away to my home in a very small town. I dont would know about this place. A best friend tell me about it. He accompanied to me the saturday afternoon. The problem is that no ever they have many cuts available, Luckily they had ribs. Next time they recomend to me that call before to go.
 
In that farm, they breed cows with natural pastures like old school. their cows dont know about balanced fed. any  hormones or anabolics. The flavor and texture was perfect and very very tasty. One of the best meats I've ever eaten.

Haha.... Here there is no snow. Today is the first day cold of the year. Now is 20ºc...
 
Nearest snow is more than 1000km south or west in the Andes (1000km). For these latitudes the weather rarely drops 0 ° C, only 1 or 2 nights per year.  Usually winter temps are 15 to 25ºc (day) 7 to 18 (night). Usually have temps of 30ºc on winter days.
 
 
The time changed ... I remember as a kid, when I was in school when the winters were cold. Now they are tropical.
 
Today I went to buy a lot of meat, brought 32kg.
 
A whole ribs rack that weight 12.5kg, the whole flank 6.5kg, back ribs flank 1kg, matambre (no know traduction) 2kg. steak, T-bone and eyerib other 10kg.
Back in home, I separate on parts to keep frozen.
Also buying this way, is possible choose the better pieces of meat when the half cows are hooks hanging on the rails. In addition it is much cheaper when buy whole pieces. Here the factories sell at the public, but there that buy a lot. Not sells cuts, only whole pieces.
