Day 3 of i'm a fat c#nt and slapping ish on lettuce magically makes it healthier.
Teriyaki beef Lettuce cups with Sunomono (cucumber salad) and habachi soup
Teriyaki beef. Sauce made from soy, ginger garlic, water, brown sugar and corn starch
Bed of Sunomono laid down first
Topped with thin sliced shallots, scallions and jalapeno and a little extra thin sliced Sunomono

1/4 cup soy
1 cup water
1t fresh minced ginger
1t fresh minced garlic
5 T brown sugar
2 T corn starch
1/4 cup water
Add everything but corn starch and 1/4 water to a sauce pan. Heat until starting to boil.
wisk the corn starch into the 1/4 cup water and add to sauce pan.
Reduce heat and simmer stirring until desired thickness.
For the meat I just marinaded some shaved beef in soy, ginger , garlic and black pepper.
browned it in the pan then added the teriyaki and some green onions sesame seeds.
I'm out of mirin but a little mirin in there would probably be good.

I"d eat about 20 of those damn they look great!!!

Not quite healthy tostadas with refried beans, lettuce, chicken, fresh pico, olives and shredded manchego cheese. More fat in those fried jalapenos than the entire dish too....
Ditch those olives and I'd inhale those in a heartbeat!!!! Good stuff in here!
