Dark Bhut Jolokia Cumin Sauce

Well i don't really have a good name for it, but i can say out of the small batch personal stuff I've made recently this one is my favorite, i've got about 3 bottles left and have been putting it on everything!!!

The ingredients are:

3 cups 4% white vinegar
2 cups water (which will mostly burn off)

4 oz bhut jolokia peppers
8 oz chocolate aji peppers

8 oz yellow onion
8 tbs chopped garlic in oil
1 lb sliced carrots
1/2 cup brown sugar
3 tbs salt
3 tbs cumin

for this i heat up the solid ingredients and hit it with a hand mixer until i get the consistency i want, then add the dry ingredients and reduce.

This one was my favorite personal sauce of 2009!!!!
 
It's pretty hot but smooth, the chocolates have a good heat and the proportion to jolokia give it just enough edge without going overboard. It's a very usable sauce.....and YES it is pretty good with tex mex. I'm working on another version of this with jamaican chocolates and maybe a bit more jolokia.
