Dehydrating vs freezing pods normal for future sauce....

Thinking about getting a dehydrator tomorrow... Big cold front is coming in this weekend and I need to pick all the pods. I won't have time to make all the batches of sauce until late next week. So............

If I only want to make sauce is there even a benefit to dehydrating the pods first, before being put in a vac seal bag and frozen?

Or is dehydrating peppers only beneficial for making powder?

How do some of you, use you're dehydrated peppers?

I normally dehydrate to make powder and not sauce. I think for sauce you would be better just plain old freezing them. It's what I would do anyway. I've never made sauce from powder though so I couldn't really tell you the difference it would make.

+1 with the above responses for freezer storage......Using dryed pods in a sauce will add some additional depth in flavor. You don't necessarily need the "super hots" to achieve that.
