Finally produced a batch that I am 100% happy with!

I have remade and tweaked this sauce about 5 times now and I finally landed on the right combination.  The sauce contains Orange Habanero, Yellow Nectarine preserves (using golden brown sugar), Water, Lime juice and applewood smoked sea salt.  (plus a proprietary method of boosting the heat levels without using extract  ;))
 
It has a really great sweet-smokey flavor with lots of heat for a habanero sauce.  It burns the top of the tongue and the back of the throat pretty quickly, but easy to manage for any chilehead.
 
Now on to my next sauce . . .

Thank you!  Even though I have the batch worked out now, it still is not in its final form.  I had intended for this sauce to be made with Red Savinas, but I don't have access to any right now.  Once I get some I will remake the sauce using the Savinas instead.  This mule is going to kick!
 
Congrats - 5 is pretty good. I have sauces that took dozens of attempts to get just to my liking. It's good to see you honing your craft. :cheers:

I'm always amazed when I see someone post up pics of 5, 6, 10 new recipes made in like 2 weeks and talk about how "ZOMG SO AMAZING" they all are. To say I'm skeptical of those would be an understatement.

Rain Man could become a sauce maker & even he'd need at least a few tries to tweak and hone his sauces. There are always subtle notes one can only notice when pairing with various foods - I won't make a change until I've tried a new sauce with a half dozen meals. And then I'll do the same with a second, third and if needed even more batches.

If it's a commercial sauce I'll be even more attentive - after all, it's a much bigger investment to make 1000s of bottles.

I agree with your methods.  I waited until I used up a full 5 oz woozy on all kinds of dishes with each batch before proceeding to the next attempt.
 
That's true - at some point.

For me that point is when I believe the sauce is flawless, with no undesirable characteristics.

This might take 3 times, it might take 15-20.

I've never had a sauce come out perfectly on the 1st try. If I were to attempt to sell any of my "1st prototype" recipes my company would fall flat on its face.

I mean, it still might, but it won't be for lack of honing my recipes.
