food First Attempt At Toffee

See... told ya it was brittle! Your gf agrees!!!!!!!!
 
Ok.  Second time, same as the first, a little bit hotter, a little bit worse....  Ok, did it again.  Only difference was that I had let it cook a little bit longer which in turn the toffee turned a very dark golden color.  Melted my chocolate and put on top again.  All of this after sipping on a cold one.  Thought I made a mistake and that the batch was ruined, but to my surprise I tried cutting it without success, so I had to break it up this time.  First impression was damn is this good and honestly tasted just like a Skor chocolate bar.  Then that damn additive kicked in!  Reaper powder again.  Anyways, just thought I would once again share.

I just saw this post for the first time, so am chiming in late. I have never seen toffee cut into rectangles like that - the toffee I know would have to be sawed to be cut like that. In fact, the toffee I know and make is more like peanut brittle - no way you're slicing it with any old knife, and it's definitely more brown than that. How was the texture of the toffee you made? Do any comparisons come to mind? 
 
Well, I am so fast, I cut it with my ninja hands...  Just kidding.  I did honestly cut it up with just a cheap kitchen knife.  It was more on the softer side, I guess it would have been similar to a fresh baked cookie texture/consistency.  I read a few things and I saw a slight change in color while cooking it and I thought that it was then the correct time to pour it out.  As well, I could not find my thermometer let along owning a candy thermometer, so I did a cold water test, and it came out stringy as I had read.  And no, it was not any more brown than that on my first batch.
 
Now read above, about my second batch.  It had darkened up a lot more than the first, as well, it was un-cuttable.  I tried with my good knife and it shattered in pieces, so I resorted to just breaking it up, which I take was the way it was supposed to be the first time.  I know have learned from my mistakes and am on steam full forward and am already planning batch # 3 & 4.  #3 will be just plain, for the missus, and #4 will be mine, all mine....
