First Time Making Hot Sauce

I decided to try to make some fermented Jalapeno hot sauce since my wife a bunch of extra red Jalapenos left over. Wish I had time to bust out the smoker but I wanted to see if it would work.

I used to do the same thing but it's a lot of clean up and sanitizing, I have 10 gal of red wine, 5 gal of apple cider and 3 gal of cranberry cider going now. Pretty sure it's ready to bottle. The wine/cider juice place is opening back up at the end of the month,cant wait to start a lot more. Enjoy.
Took a whiff of the hot sauce and it smells great, loosing that strong jalapeno smell and getting that "hot sauce" smell.
