food Fried zucchini patties

Not my recipe but my wifes. Best I could do is to get her to add cayenne flakes.

Those do sound good. I usually just slice, bread and fry zucchini. In Korea, vegetable "pancakes" are very popular although they are not what most of us think of as a pancake. Ive had something similar made with a lot of green onion and Asian chives.

I made some a few days back.
50/50 Zuccini and potato shredded, Seasoning and chipotle, pan fried. I also added dried tomatoes to soak up the liquid it released

This looks like a great way to cook zucchini even after letting them get huge. I have some monsters to pick and will use this idea. Kind of like fried green tomatoes? Thanks.

Actually... yeah, but dare I say better. More squashy of course. They are great with salt sprinkled on top when done and just a bit warm from the fryer. (They firm up a bit as they cool but don't let them get cold). :)

I'm seeing these under some fresh mozzarella.....with linguine....all covered in a homemade tomato sauce....
 
...not sure why. It just sounds good!
