dehydrators Got a small batch dehydrated and......

Now I have the dried pieces in separate zip lock bags. One bag for my Habaneros, One bag for my Reapers, etc....

They're nice and crunchy now. They snap easily. I have gotten as much air out of the bags as possible and I am wondering what I should do with the bags while I wait for the rest of my crop to ripen so I can harvest.

Bottom line: I'd like to only "blend in the coffee grinder for spice" once...... (one time for each strain of course) , So should I throw the ziplock bags in the freezer now or the fridge or just leave them out on the counter somewhere?
 
Split them....dehydrate them.....grind them......bottle them.

It's not scary or complicated. I have powders that go back to 2009 that are just as good as they were the day I bottled them.

Started out with cayenne and habanero.....then, on to Bhut Jolokia.....and Trinidad Scorpions a few years ago.....

....this year.....we did Carolina Reapers.......and it's twice as hot as anything I've made so far.....

It's like putting a hot poker on your tongue........
 
Over time, the ones I store in ziplocks eventually rehydrate slightly to where they need to be dried a little again before they grind well. I've taken to throwing in a pack of silica gel in ones I want to keep dry enough for grinding.
