Green Sauce Test batch

Ive had several requests for a green hot sauce put together a quick test batch today.
Using the usual suspects

Not pictured, vinegar, cumin, salt, pepper, oregano, smoked paprika.
Also the tomatillos and poblanos were oven roast before adding to the sauce.
Ill let the flavors marry over night and try it tomorrow after cooking.

Nice mang! Are you aiming for savory or a tad of sweet. Apple and pineapple work well but love savory too.
That sounds good too! Going for more of a savory tangy sauce with this one. I think it may need more cumin after tasting it fresh but cumin can be tricky and easily overpower the sauce so I am holding off.
 
That's so true. It can overpower. I don't mind when it's toasted cumin seed tho but when it's the powder I do.
