While much of this batch is accounted for by friends family and people who will be helping my business (I haven't made any in a while) AJ will be getting 2 of these:
Habs, some of the Serranos and some of the Jaleps - the garlic is slow-roasting on indirect heat in the webber.
A bit (ok a lot) of cider vinegar, salt, sugar, onion, carrot, a blend of dried peppers and freshly squeezed lime juice with a puree of all of the roasted peppers and garlic on their way to 195 degrees in my beloved Calphelon brushed stainless copper bottom 12 qt pot.
Hot, naked and (almost) ready. Sexxxy!
After cooling, wax on, wax off. (mostly wax on)
Can't wait until this is done with my real (full) labels and by a manufacturer. Long day!
