Hawaiian table sauce

A Hawaiian friend was telling me about a table sauce used commonly there which sounds like it is made from peppers and vinegar. Has anyone ever eaten this or do you know how it's made? Apparently it's not for export but I am curious as to exactly what peppers are used and kinds of vinegar?

I also asked about peppers from the islands, sounds like they are a heavily guarded secret too, he claims the ones I mentioned were not Hawaiian but Asian yet I could not pin him down as to which ones are Hawaiian. Might there be some special pepper we haven't heard of? By the way he's not a chilihead!

I have a cousin who lived in Hawaii at one time Jackie. I will ask her and get back to you.
 
Ok Jackie, here is the reply from my cousin who lived in Hawaii. I think she wrote to another cousin who still lives there. Anyway here is the reply:

ok here is what I got from my cousin. she isn't 100% that this is what you are talking about but she said there is a condiment used there that is called chili pepper water.

Ingredients
4-8 small dried hot red chili peppers
2 teaspoons rice vinegar
2 quarter-sized slices fresh ginger, bruised
1 garlic clove, peeled and cut into thin strips (or you can leave it whole)
1 teaspoon salt
2 cups hot water (not boiling)
Directions
1. Combine the ingredients in a clean and sterilized pint (500 mL) bottle or jar. Pour in about 2 cups of hot water and let the mixture steep at room temperature overnight.
2. Refrigerate in the morning.

she couldn't think of anything else that it could be, also she hasn't been back in hawaii for a couple years so if it is something new then she wouldn't know.
