Hello from Y-Town Ohio

Found this site looking for ideas and recipes for sauces and jarred peppers, I make my own jarred peppers and was trying to figure out how to speed up the cutting process, I use a hand mandiline cutter now. Still looking for the right item.
 
I use a benriner mandoline or a good ol' chef's knife. How about the slicer attachments on a food processor? or one of those infomercial chop-o-matic things?
