Hello everyone.
 
Long time chilli pepper fan living in London. Family from the South (USA) so have grown up with pepper sauce on my kitchen table. Here for guidance and advice on a new pepper sauce project, and to offer other posters my own experience.

Funnily enough, Louisiana pepper sauce ! Want to start ageing in some oak, but because of the lengthy process I don't want to get it wrong — did some extensive googling and stumbled upon this forum. what a fantastic place !

The search bar can be a valuable tool. Loads of great information put out by some really smart people. I suggest you start with the pinned posts in hot sauce making. Again welcome and don't hesitate to ask questions.
