Hot Beer Sauce

Ok, so.
Here’s the Story bout a dude named Paulky
who was downing several ice cold Keystone Lights.
He had his pepper, laid out before him
and a full pot on the stove.

All right this is sounding like a take off on the Brady Bunch theme song, :dance:
So after watching the whole pepper debauchery http://www.thehotpepper.com/topic/18704-hot-n-heavy-2010/
and all of those Keystone Lights being downed I was suddenly hit with the thoughts of developing a Hot Sauce based on the beer flavor. Starting off is going to be research on which beer to use as the base. Oh yeah, beersearch! It’s going to be hard work but someone’s got to do it.

Interesting. I think a very sharp-flavored IPA might complement hot sauce more, especially after you give it a fair bit of cooking. I agree to skip a pilsner. Keep us updated on your progress; I am interested to see what you come up with.

Saranac makes a caramel porter that I used to really like...I wonder if that could be integrated into a sauce...

+1 on this, I think if you could find a fairly sweet and strong tasting IPA it would go nicely :)

Ok having to rethink this. The only flavor Im getting after 2 weeks is from the habs. The flavors should have married by now. Ok back to the drawing board, or perhaps the cutting board would be a better choice.
 
So, after thniking about this a bit and mulling over the ingredients and all I think I know how to bring this sauce into being. I really hate throwing the last batch so I'm going to transfer it from the bottles into a container to freeze and use in chilie or something when needed. Tomorrow I'm going to start a new batch by fermenting the ingredients for 30 to 45 days and then making the sauce. More to follow so stay tuned.
 
The past 2 weeks have been really carzy areound the Silo. Lets just say that the life of a Foster Parent is always very interesting but I wouldn't have it any other way.

So after trying a couple of different things to see if I could salvage anything of the last batch I decided to just dump the whole thing.... Ok not down the drain but into a freezer container and to use it when I make chili or something. The beer sauce has entered Phase 2 now and as of 1 June looks like this:

Out of the Food Processor and into the container. Only thing removed from the peppers was the stem.

Those little bugs are going ape in there and it already smells great in the room. I'm going to let this go for 45 days and then finish it off.

Tomorrow though be sure to check out the Jamaican Hot Sauce thread as I'll be bottling that sauce and I can't wait to get a taste of it. As a teaser here are the 2 containers side by side.

Phildeez,I tried a Stout and a Porter when I was initially trying to figure out what kind of beer I wanted to use and one of them is one of the 2 beers I'm considering using. More on that ot follow as I get closer to bottling time.

Ok so the beer sauces have had 10 days for all of the final flavors to get all happy together and so I cracked a bottle of each open last night and to say they were what I was originally shooting for would be an understatement. They were to me perfect. I could smell the beer from the bottle and in a teaspoon taste I got the flavor of the sauce with overtones of the beer and then the heat of the peppers. Loved it.

Testers, I'll be sending out the samples aroound the 1st. Gotta wait for payday :crazy:

Sauces should be on their way Monday to reviewers, I've got one more sauce to do this weekend. I'm taking my first and still most asked for fermented sauce, Haba-peno, and changing it by using Sun-dried Tomatoes instead of the Romas. So you guys willbe getting 3 bottles. Also I've updated the labels so that hopefully their more readable.
