Hello can I use carrots or tomatoes as the base for hot sauce, or is it having to be peppers? Also I have many other fruit. I tried to add the vinegar. The sauce is prime. But the carrot is taboo? Other is ginger, and lemons, and salt.

You can use literally anything in a hot sauce but will people like it? Well, I can confirm that people definitely enjoy tomatoes as a base and sweet potato goes down very well too. Carrot certainly has a place in sauce but I've never seen it take centre stage so can't give an opinion there. Ginger, however, is a great addition. It's one of the key ingredients in thai sweet chilli but, despite being rather underdone, it works just as well in savoury products.

I'm not sure if it's ok to use brand names of commercial products here but what the hey.

One of my most favorite sauces is Sontava Habañero XX which is made in Belize. It has a carrot base. Ingredients in order of amount are habañero, carrot, onion, lime juice, vinegar, garlic and salt.

Although it's not hot (to me) it's way too hot for most people to tolerate. The thing I like about it is it's different and drink straight out of the bottle delicious. I go through several cases a year.

Who ever told you carrots are taboo? That's not a very good friend. For sure use carrots AND tomatoes! And then send me some. LOL just kidding.

As long as you understand, El Yucateco sucks, and Huy Fong's Sriracha is awesome, everything will be fine.

Haha, yeah, I have a bottle ot Huy Fong's Sriracha too. It is awesome.

Hot Dude, when it comes to designing a hot sauce I'd say if you can make it work in a sauce then it's not off limits. I've been called one of the most out of the box thinkers when it comes to hot sauce ingredients and have used a lot of things that haven't been done before. I'm talking ingredients like Celeriac, Taro, Plantains, Yucca and fruits like Peruvian Ground Cherrirs and Lucuma. The only limits that are placed on you are the limits of your own imagination and what taste good.
