How do you extinguish the Mouth-Fire?

Can't believe no one has mentioned yoghurt. Natural/plain yoghurt, whatever you call it in your neck of the woods, works a treat. Instant relief.
 
The pH and potassium from a banana helps neutralize the capsaicin. It also prevents it from being painful on the way out as well. I eat half of one before eating hot peppers and half after to tone down the spice.
