How long can a chilli produce fruit for?

If a plant was grown in a polytunnel that could maintain the correct growing conditions all year round, would the plant fruit all year round? or does a chilli plant have a dormant phase where it stops producing fruit for a while?

I believe it would fruit year round. My overwintered peppers have definitely flowered in the middle of winter.

My understanding is that a plant will not live for more than 3 or 4 years.

It'll produce as long as conditions are right and does not need a dorrmancy period. I think Willard has a plant that's 9 years old.
