I love cheese

I absolutely love cheese, so far I haven't found a cheese that I don't like. Luckily we have a great selection of cheeses in The Netherlands and this week I found a webshop with over 80 different cheeses :)

I used to buy timber from an old dairy farmer in southern tier New York earlier in my career. Every time I would stop, he would send me home with fresh cheese curd, horseradish cheese and jalapeno pepper cheese. That is one of the few things I miss about my procurement days...
 
My favorite is real Asadero or Oaxaca cheese. This is the best I have ever seen for chiles rellenos, enchiladas, quesadillas, etc, etc. I get my supply in El Paso in huge bricks and it is inexpensive.
 
I am a huge cheese fan as well. My favorite is called Parnano. I also love Gruyere, Manchego, Fontina, and a good Bleu.
 
I've eaten more cheese than any man seen. My favorite is any goat cheese. The last 6 months I have curtailed my cheese intake for health reason's. Cheese has some health benefits such as calcium content but some cheeses contain as much as 20% cholesterol, and I don't mean the good kind. Lots of fat there. Some of the goat cheese's I like are between 7 and 8 percent cholesterol. Moderation baby.
 
I'm a huge fan of the "pungent" cheeses. A good cave-aged blue with crackers and fresh fruit is probably my favorite snack.
 
Job-site lunch today consisted of-

sliced baked chicken from last night's dinner splashed with worchestershitshire sauce,
saltine crackers, sharp cheddar cheese and some stoopidly-hot habanero 5.3 hot sauce.




One of my most favorite snacks is-
cracker-cheese-hot sauce

And most combinations of the above can be divine~~~

aside from velveeta I like the basic types. I like goat cheese, though my favorite are gouda...the first 3 are my FAVORITE!!!!!! I buy these often.
rembrant extra aged gouda
1000 days aged holland gouda
kings choice smoked gouda
recently bought - reserve dofino gouda - havent tried it yet


One of my most favorite snacks is-
cracker-cheese-hot sauce

I like that combo & I can make a meal out that, but I add summer sausage (or venison summer sausage) to it.

Oh man I love that stuff. Saute up some habs, onion, garlic, and chorizo, a splash of white wine and then toss in a big glop of the velvetication. Makes a killer dip...or just get a spoon and start shovelin'. Aaaaaah the 'thangs I used to do....

Have to say that is the best cheese dip I have ever had.

a little different than what I do.
burger (beef or venison), salsa, fresh onion/tomato/chiles (or not no fresh veggies),hot chile powder or hot sauce, then alot of velvetication :lol: :cool:

if you're making a good cheese dip ya gotta have velveeta!
 
This thread is such an inspiration. (devil on the left shoulder) I need to call my brujo and get consultation on possible seafood nacho's with velveetafication. Have mercy! The Cheese Cartel is on the move.
