I may have gone overboard...

I have been lurking for a while, watching my peppers ripen and dreaming wild dreams of finally pulling the trigger and making my own sauce. 
 
I pored over all of the guides and advice that have been posted here and one night, after harvesting the last of the Habaneros and a few too many beers I made up my mind: I was going to ferment my own sauce. I wanted some variety of pepper besides the basic Habanero though, so I decided to bring in backup. 
 
The next morning dawned and I awoke to a headache and a receipt from Peppers By Mail. When my package arrived I realized I was in too deep

So.... Thanks for getting me in way over my head- I even bought out all the airlocks at my local homebrew store. 3 gallons is a reasonable start right?

What is the bonus pepper, looks knarly?

I bought some peppers from ajdrew as well. Great guy.
 
Wife tells me that half of our orders come from people who are up drinking.  I cant find it, but she showed me a website dedicated to showing pictures of drunk purchases.  Googled it, didnt find the site but found lots of articles on the phenomena in various publications.  For some odd reason I thought: I want to be on that website and in those articles.  Now here I am reading about a confirmed drunk purchase.  I feel victorious.
 
Well I ended up with 3 SFRB worth of unmarked super hots (Filled to bursting), so I decided that A : I would never be able to handle a sauce made out of solely super hots. And B: Christmas is right around the corner. 
 
To dilute the heat I went to Aldi and bought an eye-boggling amount of those small, sweet peppers (I think they have more of a pepper taste than a red bell pepper, plus red bell peppers are crazy expensive). I wanted to show off the flavor of the Carolina Reapers, so I made a couple quarts with seeded Reapers, salt, and the sweet peppers. I did the same with Chocolate Buht, the yellow ghost/fatali, and a mix. I have a couple experiments too, but I am worried those are not turning out as well so we will see if they turn out edible or not. 
 
The mash is going well, I processed them outside so I have a 25% Kahm infection rate so next time I will work in a more "sterile" space but they are bubbling like crazy. I plan to keep them going until Thanksgiving and then get to bottling. Now all I need is to figure out where to buy 3 gallons worth of bottles...
 
The peppers are a Carolina Reaper and a Trinidad Morgura (I think, no labels)

Holy Cow!!!!! I guess yer the jump in with both feet kind of chili head!!!! That's awesome and welcome to the fermenting crew!!!!! :) need some idea of your mash what did you use for starters if any. Brine and salt solutions and more pics!!!! Hahaha Great Job!!!
 
I had to abandon the airlocks- the peppers started trying to escape. 
 
I went to just a regular canning lid and burping/flipping 3 times a day- hopefully this will solve the Kahm problem and seems to keep the pepper mash from puffing up above the brine.

Sounds like you're over filling your jars to much mash and brine if that's the case. Have you tried the cabbage leaf method for holding mash below brine.

Ive told my mother on multiple occassions, her computer needs a breathalyzer!  I at least have the decency to contain my drunken surfing to youtube debates about why Zepplin is superior to the Stones! :drunk:
