If you could receive on chile gift this Christmas, what would it be?

I want a small production kitchen space so I can produce sauces that aren't commercially viable due to ingredient sourcing - like lightly smoked sauces that use hickory or cherrywood, Hawaiian chili sauce, and others.
At some point I will build or rent such a space, but getting one for Xmas would sure save me some effort.
