Introducing Sybil

I am introducing Sybil my new sauce creation that has multiple personality disorder. This sauce is brought to you by the letter J. Here are it's beginnings...

I have been thinking for a while about making a blueberry sauce. Then the other day I read about some combination of berries and cucumber. That got me thinking. Then I thought Melon, "why the hell not!" I have a pretty good sized back of frozen pods in the freezer. I pulled them out and started thinking, "what would go with this sauce?" I decided on Fataliis, Bhuts, a couple of Douglahs, Caribbean Reds, 7-pots (including yellow, red, and a Brain Strain), and a Scorpion. I added three different vinegars, balsamic, red wine, and rice wine, the juice of three large limes, sea salt, and raw sugar. This sauce should definitely live up to its name.

Cooked and blended. It tasted a bit too tart for me so I added a little more raw sugar and some clover honey. Now it is just where I want it. The blueberries are the first thing you taste then the cucumber and the hint of sage the peppers then slam on your tongue like a sledgehammer. I must say this is a ripper! A bit of a sneaky one though. I am happy with how it turned out. Bottled pic to come once it cools a bit.

Definitely digging the color. Taste is good. Heat is right where I wanted it. I see a pork loin in this sauce's future. Bottled up the small ones to take with me to Peppers at the Beach.
 
Its a little thinner than applesauce. It is sweet, but it doesn't stay that way long! I don't know about it as a dessert sauce. I guess it could be though.
 
That blend sounds amazing! right up my alley! Can't wait for Peppers at the Beach, when are you getting down there, unfortunately i'm only there friday and saturday, but on the good note that's because Nicoles Graduation is sunday. Maybe we can do a recipe with your sauce!
 
Cool sounds good to me. I am coming down early Saturday morning. I just ate some on some leftover bbq chicken from yesterday and it is not as hot as I thought. It is warm, but not extreme.

That's a very nice looking sauce...and the combination of ingredients sounds great.
How many blueberries did you use?..and was it a honeydew melon?...if so...did you get any melon flavor at all?
Since blueberries are in season...and on sale around here, I'd like to give your Sybil a try this weekend.
 
I used 12oz of blueberries and yes that is a half of a honeydew. You can taste the melon believe it or not. Give it a shot. I got some pretty good reviews from the folks at Peppers at the Beach that I passed this out to.
