Manchego is the one in the middle of the triangles.  There is also Tipsy Goat, Iberico, Butterkase, Baby Swiss, Sharp Cheddar and not pictured Calabrese Blue Cheese.  I have some of Red Hawk's habanero honey mustard and some quince paste to go with them.

Nope, no hab cheese this time.  I have some hot mustards and about 2000 hot sauces you can use though.

Tipsy goat is pretty much the only goat cheese that doesn't taste like you rambo dove into the goat pen and rabidly bit the first goat you came across.  The rest is redolent of urine soaked hay imo.  Carry on...
