Jerk cooking that is! (get your mind out of the gutter people!)

I've been working on making an an authentic jerk chicken, as well as using some commercial brands so I know what I should buy when I'm feeling particularly lazy. I'll post findings and pictures at a later date. My goal, should I ever graduate, is to get down to Jamaica and try to learn first hand from some people. Only problem is getting the wood they use into the states...and I'm sure my jerk cooking phase will end sometime in the next 4 months, but I'm going to enjoy it for now.

And do you realize that you stated in your thread titled "Jerkin it" that your main problem is getting wood?

Try to hit up some other islands as well, such as Trinidad and Tobago. There's some mighty fine jerkin being done there as well.

I have some jerk sause made my stillmanz who is a member.

He only made 26 bottles so i was told....

It took a bit to get used to but i Love it now, it's just a shame that it is only a small bottle.

It is tops.
