annuum Jalapeno's not hot at all?

Ok I've purchased about 25 Jalapeno's for cooking and I took the stem off them and put them in the freezer, Well I took 4 of them out last night to thaw and I took the seeds and the membrane & they were not even hot at all not even mildly warm?

Could the freezer killled the hotness? or did it become a fruit as ALTON BROWN said on one of his episodes?
 
Its likely not the freezing, its probably a very low heat jalapeno variety that North American grocery stores love to carry:( Were the membranes hot at all?
It could have been under ripe too.

No they were warm but not hot at all.

How come Subways jalapeno's would be hot but not the ones you buy at the store?
 
Jalapenos are funny things. I've had some jalapenos that were very mild & some that packed surprising heat. I'd wager that you just got some duds. I know I'd be disappointed if I was looking forward to cooking with them only to find they were mild!

Thank you Impy, I think I'm just going to grow some jalapeno's in a fish tank side my apartment, this way I know what kind of heat I'm getting....
 
I usually scrape some of the seeds out but leave the membrane inside. Most of the heat is concentrated in the placental tissue. Try a slice of just the membrane to see if it has the bite you're looking for. If not then you got a mild jalapeno.
 
Yeah, unfortunatly there are some that are bred specifically to not be hot. Primarly for the wussie average US buyer and food biz. (whooo, i ate a jalapeno!1)

Oh, and Serranos tend to be hotter and have about the same taste.
 
The majority of store bought jalapenos i've ate have been mild at best. It's disapointing when you have your heart set on some stuffed jalapeno's for lunch.

Chiles are fruit, or actually berries if you want to be precise.

Who or what ALTON BROWN is I don't know...
 
There are literally dozens of varieties of jalapenos on the market, and probably at least a third of them have been bred to be mild or medium heat. There's even one that had no heat at all, the Fooled You hybrid.

Hey Pam, I actually found a heatless hab once. It was more red than orange & they were labeled "sweet habaneros" @ the store I got them from. They were actually REALLY tasty! No heat whatsoever, mind you, but the flavor was great. It was freaky for me to pop one of those suckers in my mouth & instinctively wait for the burn that never came.
 
Most of the heatless C. chinenses I've tried still have that chinense taste that scares the taste buds for a few seconds

That's kind of what mine were, Hell my mom of all people said they were not even hot at all, She had a sting for a millisecond and then it was gone, My mom hates "HATES" all things with heat.
