Jamaican Jerk Sauce

Got a little antsy waiting on my current ferments and had some stuff in the kitchen that needed to get used up so I decided to make some sauce!
 
Players:
  • Kumato Tomato
  • Onion
  • Mango
  • Chocolate Bhut Jolokia
  • Chocolate Moruga Scorpion
    (thanks for the peppers Salty!!! :))
  • Raisins
  • Tamarind
  • White Wine Vinegar
  • Garlic
  • Thyme
  • Allspice
  • Clove

After cutting into the chocolates and seeing the insides, I quickly realized the other peppers weren't needed in this one.

Color of these tomatoes is beautiful and matches matches the peppers nicely!

Money shot and then let it simmer away.
 
Blended it with the stick, then ran it through the food mill. I saved the food mill pulp, will dry when I have time, would be great on some charcoal grilled chicken!

Final product. :)
 
Sauce came out really good, can't wait to see how it changes over the next couple of weeks. Now off to make labels.
 
 
Haha damn, I knew I was forgetting something! I basically ripped off Pickapeppa and it wasn't on their label lol. But now that I think about it, I think next time I will halve the onion and replace with scallion.

it's funny, i started my ferment today with chocolate ghosts and scorpions that OldSalty sent me. Though i used all 11 oz of it and not just a few peppers haha. not jamaican style tho
