Jamaican Jerk Sauce

Got a little antsy waiting on my current ferments and had some stuff in the kitchen that needed to get used up so I decided to make some sauce!
 
Players:
  • Kumato Tomato
  • Onion
  • Mango
  • Chocolate Bhut Jolokia
  • Chocolate Moruga Scorpion
    (thanks for the peppers Salty!!! :))
  • Raisins
  • Tamarind
  • White Wine Vinegar
  • Garlic
  • Thyme
  • Allspice
  • Clove

After cutting into the chocolates and seeing the insides, I quickly realized the other peppers weren't needed in this one.

Color of these tomatoes is beautiful and matches matches the peppers nicely!

Money shot and then let it simmer away.
 
Blended it with the stick, then ran it through the food mill. I saved the food mill pulp, will dry when I have time, would be great on some charcoal grilled chicken!

Final product. :)
 
Sauce came out really good, can't wait to see how it changes over the next couple of weeks. Now off to make labels.
 
 
My guess at a recipe:
Per 1L Ball jar (1200-1500g?)

As promised here is what I used...
 
2 pounds Kumato tomato
2 small to med onions
3/4 cup cane sugar (or use light brown)
25 oz white wine vinegar (I'd use cane vinegar if I could)
5 cloves Garlic
12 oz of Raisins
3 Mangos
1.5 tsp dry Thyme
1/2 tsp Clove
6 Allspice Berries
2.5 tbs Tamarind concentrate
2 Chocolate Scorpions
3 Chocolate Ghosts
 
This made 15  5 oz bottles plus a pint jar.

sounds killer and I love pickapepper. Never had an allspice berry.

I bet you have it is not fresh it is dried, so if you've had jerk, or allspice powder. You can buy them as dried berries and grind yourself, like peppercorns which are also berries.
