Well first you have to grow a big plant with a nice stem before making a Bonchi of it. Once you've cut it the trunk or stem actually won't grow anymore. The big roots are nice for cosmetics and trimming the smaller roots will make it more massive. But take a look at Fatalii's Bonchi instruction

The plants look wonderful. I was on fitalii's website the other day and was looking at the growing guide for the bonchi. It looks like a lot of fun. I will definately be doing that with some plants next season. I hope I can get them to look half that good.
