First I want to thank pepp3rfreak for the peppers.

260 Lemon Drops
1 Cup Vinegar
1 Cup Lime/lemon juice
1 Cup Brown sugar
1 Bulb Garlic
1 Medium Onion
2 TBS Salt
1 Mango

Now I am sure you all have an idea how it goes here, but I tend to like simplicity, and for the record, have never cooked with mango. I have eaten foods with it and drinks but never actually cooked with it.

I discovered they have a core as I sliced into the

Mango....the lighter is for reference.

Well for simplicity I sliced it up and it went in the blender behind the Lemon drops. I forgot a picture here. oops.

And here is where it got weird.
As I started cooking everything...the smell........my head........what the hell is that...uuuuggghhhh....smell? Could I be making something toxic?

Off to google and I find the skins contain the same toxin that causes the reaction with poison oak and ivy. Headache....check. Smell.....check.

It took 20 more minutes to determine the toxin cooks off and the finished product should be fine. I am glad I am not allergic.

It came out really thick...nothing to do with all the internet searching while it was simmering of course. lol

The flavor profile leaves a little to be desired, but still trying to figure it out. Good mango flavor with a dry creeping heat(I would have loved it to creep hotter). The 260 Lemon Drops weighed in at almost 1 pound which is why I went with the other ingredient amounts. Please let me know if you think the numbers are off. Here they are again

260 Lemon Drops
1 Cup Vinegar
1 Cup Lime/lemon juice
1 Cup Brown sugar
1 Bulb Garlic

Always peel your Mango

hehe

justaguy- your ingredients sound OK,

did you cook the mango with the skin on without peeling it? DId you strain it to get the peels out?

And the Lemon Drops have a great flavor, but from the few we've tried, they are one of the milder chiles. If you want more heat, try adding a fatalii or other yellow/orange/or even red-skinned chile for that extra punch.

We really enjoyed the Lemon Drops that came from JSKaiser recently. A really fun chile to work with and that might be on the grow list for next year! Made a Lemon Sauce from the lemon drop peppers that ChileAddicts wife seemed to enjoy because it wasn't melt-your-face hot.

Just to be clear, the mango skin and pulp went into the blender and then into the sauce pot--~

I love the Lemon Drops, We do a sauce with them and can't wait to do this years. I picked up a nice supply of them the past two weekends. They seemed to be coming in a best a little late out this way. I had no success with our plants at home.
