@Rocketman, I thought about it, but I dont have enough to do it both ways today. I smoked enough peppers for my chipotle powder and for a standard cooked chipotle sauce which I would like to have for this weekend.
I do plan on smoking some more at a later date so I can put some into a ferment, want to make a gallon or so
 
If you dehydrate youll bring a more intense profile to the front
Then re-up in some good high octane liquor and get down to business(1-3 days)
Makes a difference,it really does
