Let's see if I can screw this up...

Finally decided to give fermenting a try. This is my first so I am keeping it simple. Thai peppers, some garlic and salt. Wish me luck! I'm going to need it! Any advice or ideas would be greatly appreciated.

You got anything to hold the mash under the brine?
Well, there is strike one for me... Maybe drop aa smaller sterilized glass jar on top to push it down?

How long should it take before it starts fermenting? I added some lactobacillus to hopefully kickstart it. Not a single bubble yet. Not like my other fermenting experiments I have going, which were bubbling as much as my stomach after Golden Corral within 20 minutes of pitching the yeast.
