Liquid smoke

Has anyone tried liquid smoke in their hot sauce recipes? It's generally used for cooking so perhaps it may be a good alternative to smoking chiles. I don't think it would take much.

I am going to make a jalapeno sauce tonight and may try some liquid smoke with some to test it out.
 
Many manufacturers use it as a cheap substitute. Like keytones (the chemical that's used to extract capsacin) there's a fairly large chunk of people out there allergic to it. Don't skimp on ingredients, always go with quality.
 
Adding liquid smoke and peppers for smoked peppers is the equivalent of baking chicken and adding liquid smoke for BBQ chicken. It just ain't the same, and yeah, you can call it cheating ;)
 
There just isnt a substitute for real smoke but if you must I reccommend heating a pan on stove till drops of water sizle then add a teaspoon of liquid smoke.. this burns off that fake salty taste. then i sear my peppers before i make my base..just a tip
 
I use liquid smoke when making my beef jerky and it comes out ok. As IGG stated they are lots of different types so make sure you go with quality and not a 500ml bottle worth $1. You also have to be really careful and doing a test run as you said you are doing is always a good thing cause a few drops of liquid smoke can sometimes be not enough but then an extra 2 drops can destroy the overall taste...JMO

I'm at work and can't remember the smoke I use but will tell you tonight as I feel it's the best i've tried and it's great cause the local BBQ store sell it....

I ruined some salsa that way Moyboy. My dad loves this smoked salsa I make him, so when I was going over and didn't feel like spending the time smoking peppers, I used a little liquid smoke instead. Well, needless to say I used too much and ruined it. My dad still liked it, but to me it was way too smoky.

yeah I learnt the hard way as well JayT with both my jerky and general steak/chicken marinades. One batch of jerky was like holding your over an open fire and breathing in...Not fun. :lol:
 
Ok this stuff is potent. The kind I have is hickory smoke and it comes in a small bottle with woozy type spout. I added a small amount, measured in drops, to some sauce I just made (50 ml maybe) and it was too much. It does taste artificially smokey - partly because I used too much and partly because it's, well, artificial. :)

Well it's all a learning experience mate.:) It will never be as good as the real thing but for a quick fix it is good in the right amounts. I for one am thankful for liquid smoke because it gives me the basic flavour I want and is quick when I don't have the time to dedicate to actually smoking the item.
 
liquid smoke is a useful ingredient when proper smoking isn't an option. The good stuff is just smoke condenced into a liquid. I've seen taste tests where most people couldn't tell the difference between real smoke and liquid, but I'm pretty sure I could tell the difference immediately.

Woodland also has a Mesquite that I've yet to try.
